Mom's Buttermilk Pancakes

This is a "TNT" recipe I've been using for awhile now - discovered on AllRecipes and thoroughly enjoyed by all in our household! Quick, easy, just a couple ingredients and tastes fantastic - what more can you ask for in a pancake recipe?! One of the comments I wrote about this one is that they remind me of Cracker Barrel pancakes - and my hubby agreed! The first time I made these for my son for breakfast, we had a couple leftovers and he asked if he could have one for DESSERT that night they were so yummy! I love the thick lumpy batter and how fluffy they are. They are not a sweet batter, so if you prefer sweet throw in a TBS of sugar, I do every now and then, but now that we've switched over to real maple syrup I don't bother since they get plenty of "sweet" from the syrup! :)

Start out with AP flour, buttermilk, salt, an egg, baking soda and 2 TBS of butter (that needs to be melted!)


Combine the dry ingredients in a bowl and stir to combine.


Next come the wet ingredients, buttermilk, egg and melted butter.


Stir the yummy batter together gently JUST until combined, lumps are good!

Then use anything from 1/3 cup measurer up to 1 cup measurer depending on how big you want your pancakes, and measure out some batter onto a pre-heated (over medium heat) griddle sprayed with cooking spray or smeared with some butter.

When the edges start drying out and you get lots of little bubbles it's time to flip!



Then you get a couple golden brown pancakes! Cook another minute or two, until the bottom is golden and firm and you can move to cookie sheet and place in a pre-heated (and then turned off) oven to keep them warm while you finish the rest, or serve up the hungriest family member while you continue to slave away! :) My husband has a "no eating until mama eats" rule, so ours hang out in the warm oven while I finish cooking.


Repeat (I love the bubbles)!!


Douse liberally with maple syrup and dig in and enjoy!

Ingredients
1 cup flour
1 teaspoon salt
1 teaspoon baking soda
1 egg
1 1/8 cups buttermilk
2 tablespoons butter, melted
1 TBS sugar (optional if you want sweeter batter)

Directions

  1. Preheat and lightly grease a large skillet or electric griddle.
  2. Mix the flour, salt, sugar (if using) and baking soda together in a bowl. Add the egg, buttermilk, and butter; stir together lightly, but keep it lumpy. The batter should look thick, spongy, and puffy.
  3. Drop 1/3 cup of the batter onto the cooking surface, spreading lightly with the bottom of the cup. Cook until lightly-browned on each side, 1 to 2 minutes per side.
